Shaun's Filipino Ube Crinkle Cookies

UBE CRINKLE INGREDIENTS
DRY INGREDIENTS

• 1 1/2 cup all purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt

WET INGREDIENTS

• 1/2 cup unsalted butter, softened
• 1/4 cup granulated sugar
• 1/4 cup light brown sugar
• 1 large egg, room temperature
• 1/2 cup ube halaya (jam)
• 1 teaspoon ube extract

DUSTING

• Powdered sugar

INSTRUCTIONS

1. In a small mixing bowl add dry ingredients (flour, baking powder, salt) and whisk to combine. Set aside.
2. In a large bowl (or use stand mixer) add butter, granulated sugar, and brown sugar. Beat until light and fluffy.  Add egg. Continue to beat. Add ube halaya and ube extract. Beat until well combined.
3. Slowly add dry ingredients. Mix until just incorporated. Remove dough and chill in the freezer for about 10 minutes.
4. Preheat oven to 350F. Line two baking sheets with parchment paper and set aside.
5. Remove dough from freezer and scoop about 1 tablespoon of dough and roll in to a ball. Then roll dough ball in powdered sugar until well coated. Place dough on baking sheet and bake for 12-15 minutes. When done baking cool on a cooling rack.

NOTES
*Using a room temperature egg will allow it to be better incorporated in the cookie dough.
*Chilling the dough keeps the cookie from spreading out while baking.
